Salad Greens with ....

* Candied pecans and strips of fresh mango

* Pomegranate seeds and chunks of feta cheese

* Dried cranberries and chunks of blue cheese

* Smoked tofu, tomatoes, walnuts or cashews

To candy pecans: 
1 cup pecan pieces of halves
1/4 cup brown sugar
1 tbsp olive oil
1 tbsp balsamic vinegar

Mix oil and balsamic vinegar in a fry pan over medium heat.  Stir in brown sugar.  When bubbly hot, add the pecans.  Coat the pecans in the mixture and fry for 3-4 minutes, stirring constantly.  Remove pecans from pan, put onto a cookie sheet and separate from each other.  Allow to cool.
