Miso Mushroom Gravy
2 tbsp olive oil
2 tbsp butter
1/2 small/medium onion, chopped
2 cloves garlic, minced
2 cups mushrooms, sliced
2 tbsp tamari
2 tbsp miso
1/4 cup water
Preparation:
Heat oil and butter in a medium sized pot. Add onions, garlic, mushrooms and tamari. Cook on low heat for 10 minutes, stirring frequently and adding water. Add miso paste and blend everything smooth using the hand blender. Add more water to adjust consistency.
