Lentil Soup
- 1 cup red lentils
- 4 cups soup stock
- 2 tbsp soy sauce
- 1 tsp basil
- 1 tsp oregano
- 1 tsp marjoram
- 1/2 tsp chili flakes
- 2 cloves garlic
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 chopped red pepper
- 1 cup chopped tomatoes
- 1 bunch chopped spinach
Preparation:
In a large saucepan, heat oil over medium heat. Add garlic; sauté until golden brown.
Add carrots, celery, bell pepper, tomatoes, spinach, lentils, stock, basil, oregano, marjoram and chili flakes; cover and simmer for 20 minutes.
