Lentil Loaf
1 1/4 cups green lentils
- 2 1/2 cups vegetable broth
- 1 tbsp olive oil
- 1 onion
- 2 clove garlic
- 2 cups cooked veggies (celery, carrot, peas, peppers)
- 1 teaspoon basil
- 1 teaspoon oregano
- 1/2 teaspoon sage
- 1 teaspoon ground black pepper
- 1 cup bread crumbs or rolled oats
- 2 eggs
- 1/2 cup water
- 3/4 cup salsa
- 1/4 cup olive oil
- splash of worchestershire
Preparation:
Boil lentils in vegetable broth (about 40 minutes)
Saute onion, garlic and dried spices in olive oil. Add mixture to lentils (before, during of after cooking lentils).
Saute vegetables
In a large bowl, mix cooked lentil mixture, vegetables, bread crumbs/rolled oats, eggs, water, salsa, olive oil, and worchestershire sauce.
Spread into greased bread pan
Cook for 40 minutes at 400 degrees
Notes:
This is good served with salsa or miso gravy.
