Chickpea Curry

  • Indian
  • Main Dish
  • 2 onions
  • 4 cups vegetable stock
  • 4 cloves garlic
  • 2 tsp curry powder
  • 1.5 cups chickpeas
  • 1 head broccoli
  • 0.5 head cauliflower
  • 1 bunch spinach
  • 2 tomatoes
  • 300 grams tofu

 

Preparation: 
  • Fry onions, add garlic and curry powder.  Cook.  
  • Add stock, chickpeas, broccoli and cauliflour.  Simmer 5-10 minutes.
  • Add spinach, tomatoes and tofu.
