Chickpea Curry
- 2 onions
- 4 cups vegetable stock
- 4 cloves garlic
- 2 tsp curry powder
- 1.5 cups chickpeas
- 1 head broccoli
- 0.5 head cauliflower
- 1 bunch spinach
- 2 tomatoes
- 300 grams tofu
Preparation:
- Fry onions, add garlic and curry powder. Cook.
- Add stock, chickpeas, broccoli and cauliflour. Simmer 5-10 minutes.
- Add spinach, tomatoes and tofu.
